Fluffy & Delicious Banana Pancakes You Can Make With Simple Ingredients At Home In Under 15 Minutes!

For the longest time, bananas for me were just meant to be eaten on their own because I didn't like the idea of involving them as the main ingredient of any recipe. One time I had a few very ripe bananas that were going to go bad soon and I didn't like the idea of just throwing them away because that is a waste of food, so I googled what can I use ripe bananas for and some of the suggestions were that I can make pancakes out of them.
So I looked up a few recipes for banana pancakes and put them to the test! I have always been on the lookout to find the best pancake recipe out there, and through a long process of trial and error, I have finally found a recipe that guaranteed the same results every time I make them.
Tips and tricks to get perfect pancakes every time:
Overmixing is key to failure. You want to mix your batter just to the point where the ingredients are combined together, you don't want to overwork the gluten because you will end up with rubbery-textured pancakes.
Let it rest. Give the batter a minimum of 5 minutes rest if you want your pancakes to be light, fluffy, and smooth.
Grease less. If you have the right pan to make pancakes you don't need to put much oil or butter because that will end up frying your pancakes, opt for a well-trusted non-stick pan.
Fluffy Banana Pancakes
Ingredients:
1 ½ cups all-purpose flour
¼ cup vegetable oil
2 tablespoons sugar (optional)
2 ½ teaspoons baking powder
2 large eggs, room temperature
2 ripe bananas
1 cup milk
pinch of salt
pinch of cinnamon (optional)
splash of vanilla extract
Instructions:
In a bowl, mix all the dry ingredients together the flour, sugar, baking powder, cinnamon, and salt then set aside.
In another bowl, mash the bananas, then add eggs, milk, oil, and vanilla extract and mix the ingredients until they are well combined.
Pour the dry ingredients into the wet mixture and mix until just combined. Then let the batter sit for 5 minutes before you cook it.
In a medium heat pan, pour 1/4 cup of the batter and wait for 2 minutes until bubbles start to form on top. Then flip to the other side and cook for another minute.
This recipe takes about 15 minutes from preparation to cooking time and yields a serving of 4 pancakes of large size or 6 small-sized ones. You can use different toppings of your choice, I personally use chocolate spread caramelized bananas and whipped cream, and sometimes nuts and raisins.
